Those options (at least rough versions of them) should be in the update after next. Working on some of the bugs with that *right now*, in fact.

Yes hold shift and keep holding it until an options window pops up allowing you to pick resolution, windowed and a few other things.

The big thing you have to hold the shift key the entire time, not just when you click it. I catch myself doing that a lot and having to exit and restart the game, holding th shift key as I click it and wait till the option menu appears.
